The sound of this combination alone convinced me that Paul is a genius. Then when I bite into it... I'm convinced Paul, is a wizard. The gandolf of chocolate. What I got out this one, was rather fragrant. The herb isn't overpowering at all, but just perfect,

Rhubarb is such an underrated ingredient. This 'bonbon' is a perfect mix of tart and sweet, pale pink with speckles of sage...I may have to hit Paul up for his recipe because I need to have this in my own assortment. does that sound mean?

When the first bite hits your tongue, the subtle bitter dark chocolate hits the buds with notes of the sage coats the roof of your mouth. Then all of the sudden BAM!!! the sweetness of the rhubarb in the ganache causes a tingling and mouth watering explosion in your mouth. This was absolutely fantastic.
