As a fellow chocolate truffle maker myself, enjoying Paul's chocolates never seems to get dull. His adventurous and risk taking mind of infusions with chocolate far exceed the bar of gourmet chocolates. Certain bonbons are made to make the infusions the star, however, when an infusion makes the chocolate the star, then it truly is an indulgent cocoa experience. Your palate experiences the rich chocolate, yet it picks up the notes of hazelnuts and cinnamon to elevate the ganache to a heightened dimension.
We have placed a couple different orders of chocolates and have enjoyed them all immensely! Paul Kearins really is a master at his craft an creates wonderful combinations/flavors! My personal favorite is Hazelnut Cinnamon and is an example of great combination of flavors which are perfectly balanced and not overpowering. The texture is also 'melt in your mouth' perfection! Try them all... you will not be disappointed!
